White People Burritos
Serves 4 People!
Ingredients
- 2 medium-sized yellow potatoes
- 1 pound of Beyond Meat, Impossible, or some other ground protein of choice
- 1 packet of "white people taco seasoning" of choice (see notes)
- 1 16oz can of vegetarian refried beans
- 8 fajita-style tortilla wrappers
- 1 packet of Daiya cheddar style cheeze sauce
Instructions
- Preheat your oven to 450f. While you preheat, dice your potatoes to bite size. Heat up a baking tray and bake the potatoes for 20 minutes. Don't turn the oven off. You just want to stir the potatoes after 20 minutes. Then you put them back in the oven for another 20 minutes.
- While your potatoes cook, brown your grounds in a pan on the stove. Once they're browned, add your packet of white people taco seasoning according to package directions.
- Heat your refried beans either in a saucer on the stove or in the microwave. It's up to you how to do this. You just want to heat them up for about 5-10 minutes.
- Once your potatoes are done, your grounds are totally cooked with the seasoning, and your refried beans are heated up, it's time to prepare. Get you a tortilla.Next, cut a small opening in a corner of the cheeze sauce packet, and spread a small amount in the center of the tortilla. Next to the cheeze sauce, place a dollop of the beans. Then add an eighth of your grounds on top of the cheeze. Finally, add an eighth of the potatoes next to both of these as well.
- Wrapping your baby burrito may be kind of tricky. It's not like rolling a blunt or something. This is a great tutorial on proper burrito-ing technique.
- Optionally, you may toast the burrito on a hot, slightly oiled pan. I'm lazy so I don't do that.
- Repeat steps 4 and 5 until you have no more burritos left to make. This should yield you with a total of eight burritos, which is enough to feed four people, about.
Recipe notes/tips
- I feel like everyone knows what I mean by "white people taco seasoning". Like, Tex-Mex style seasoning. You can use the Taco Bell kind, I used McCormick for this recipe, I think El Paso makes one. There are some that are gluten-free, like Siete's is gluten-free. Or you could use a spice blend from home, too.
- This is seriously such a good make-ahead freezer meal. I like to make a shitload of these at once and store them in the freezer. I recommend storing two in a bag or container for later, in the freezer. Then, when you're ready to enjoy, wrap them each in their own little paper towels, microwave on high for 1 minute 30 seconds, flip them over and microwave for another 1 minute 30 seconds, and then finally flip them once more and microwave for another minute.
Look close! I filled that burrito so much, it developed a stretch mark. I thought that was just so cute and hilarious.
